This Blue Masa Flour is sourced from a cooperative of indigenous farmers located near the Popocatepetl Volcano in the Mexican state of Puebla whose main activity is growing blue corn, utilizing traditional techniques (milpa) which guarantees the preservation of their corn varieties. All-natural blue corn is gluten free, vegan, and non-GMO. Blue Corn is high in antioxidants, has anti-inflammatory properties, and is higher in protein than its yellow counterparts. It also has less starch for a lower glycemic index, thus being a better choice for diabetics and people on a low carb diet.
